Mmmm, waffles

Given my sister's aforementioned inability to be deceptive, I'm looking forward to whipping up some waffles in the near future, and thought these sounded pretty tasty.

Banana Sour Cream Waffles
1 cup all-purpose flour
1 1/2 teaspoons granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg, separated (beat egg white until stiff)
1 cup sour cream
1/4 cup milk
1/4 cup butter, melted
1.5 teaspoons vanilla extract
1 banana, mashed
1/4 cup chopped pecans (optional)

Heat waffle iron.

Sift together flour, sugar, baking powder, baking soda and salt in mixing bowl. Set aside.

In separate bowl whisk together egg yolk, sour cream, milk, vanilla extract, butter and banana. Add liquid mixture to dry ingredients, stirring just until blended. Fold in beaten egg white. Pour batter from cup or ladle onto center of hot waffle iron. If adding pecans, may mix them into batter or sprinkle a handful over waffle just before baking. Bake about five minutes, or until steaming stops. Remove waffle carefully.

Makes 4 servings.


Anybody else got any favorite waffle recipes? I have an excellent blueberry compote recipe that I've used in the past . . . here's hoping I can actually find it, and that it wasn't a casualty of the data loss due to a bad zip file.

May as well look for recipes -- I'm bored at work, and unfortunately am stuck here despite the fact that I have an awful lot I could be doing at home. :/

LOL, in my house, the instructions for making waffles usually include, just "add water and shake." Yours sound yummier!

Just FYI, jiffy cornbread has a waffle instruction on the box, you can make corn waffes to serve inder chili :) and a lot of muffin recipes can be converted to waffle iron use by adding some oil.

See, I think corn waffles sound totally yummy. David was squicked by the thought for no apparent reason, but I might just fix them sometime anyway with chili and let him see the practical application. He likes Fritos with chili, and they're corn-based, so why not a corn waffle?

It's just cornbread in a funny shape! I like fritos too, but it;s often easier to keep a box of corn muffin mix in the cabinet, than try to save a bag of fritos!
