New favorite sparkling wine

Oh, my.

We opened a bottle of Domaine Chandon's Chandon Riche yesterday, and paired it with Cypress Grove's wonderful Humboldt Fog cheese. We did so based on sommelier Andrea Immer's recommendation, and wow, was it a hit.

The champagne (yes, yes, I know, Methode Champenoise, sparkling wine, etc.) alone ... I so have a new favorite. It's incredibly smooth, with just the teeniest, tiniest hint of sweetness. Now, normally, I hate sweet sparkling wines, but this is so subtle that it's more like somebody just garnished the bubbles with a slice of peach and you're eating the fruit with the champagne. It's very drinkable. It still has that characteristic champagne crispness, but it's softened by creamy honey notes on the finish that complement and intensify the flavors in the cheese.

This is one of the best food/wine pairings I've had in quite some time.

Oh, fabulous to hear! I love Chandon's blanc de noirs & this sounds tasty!

I'd be very interested in hearing what you think of it if you happen to try it. :) I haven't tasted the Blanc de Noirs, but it does sound good.
