I made waffles!
I've made crème brûlée. I've made a German chocolate cake from scratch. I've made some culinarily challenging things in the fifteen-plus years that I've been cooking.
However, I had never made waffles prior to today. I got a waffle maker last year for Christmas, but have put off using it because I thought we were going to be moving into a house, and then we didn't, and so I decided today to unpack it and use it.
I used the recipe
weetanya posted a little while back (I'd link to it, but I can't find it in your previous entries. I did look.) I was a little nervous, because it called for beating the egg whites into firm peaks, and I've had bad luck with that sort of thing before.
Well, I did it, by George. Those eggs peaked, baby, and did they ever! The waffles were delicious, and I have to give major props to my excellent Cuisinart WMR-CA waffle maker. I was fully expecting to have a sacrificial first waffle, but no - first to last, all were perfectly golden brown. Not a burnt one in the lot. Recipe made nine waffles.
I'm quite pleased with myself. The eggs actually did what they were supposed to do. Perhaps it was a holiday gift from a good Christmas spirit, but in any case, I'm happy.
