I made waffles!

I've made crème brûlée. I've made a German chocolate cake from scratch. I've made some culinarily challenging things in the fifteen-plus years that I've been cooking.

However, I had never made waffles prior to today. I got a waffle maker last year for Christmas, but have put off using it because I thought we were going to be moving into a house, and then we didn't, and so I decided today to unpack it and use it.

I used the recipe weetanya posted a little while back (I'd link to it, but I can't find it in your previous entries. I did look.) I was a little nervous, because it called for beating the egg whites into firm peaks, and I've had bad luck with that sort of thing before.

Well, I did it, by George. Those eggs peaked, baby, and did they ever! The waffles were delicious, and I have to give major props to my excellent Cuisinart WMR-CA waffle maker. I was fully expecting to have a sacrificial first waffle, but no - first to last, all were perfectly golden brown. Not a burnt one in the lot. Recipe made nine waffles.

I'm quite pleased with myself. The eggs actually did what they were supposed to do. Perhaps it was a holiday gift from a good Christmas spirit, but in any case, I'm happy.

You're going to be the reason I get fat. I keep reading your posts and going, "Uh, that sounds good. Time to raid the kitchen."

I'm glad they came out well and you had fun making them! I use my waffle iron more often to make corn waffles on which to serve chili than for breakfast food. (Jiffy corn muffin mix-I'm all about the shortcuts!) With 6 people in these, one person ends up slaving over the waffle iron at breakfast while the rest of the house is eating the waffles as fast as they come off the iron. By the time you get to the end of the batter you're sick of the smell of them cooking and would rather have a bowl of cereal, which is just as well because no one saved you any waffles! :)

Corn waffles with chili? Joan, that sounds BRILLIANT! Is the recipe on the Jiffy package? You've totally inspired me -- David might like that on New Year's Day, I'm betting!

Yes, the recipe is on the side of the box. Forewarned though, jiffy corn muffins are the sweet kind so if you don't like sweet corn muffins, you'll probably want to invest in a different recipe. I'm not a huge fan of sweet corn bread but the jiffy mix is so easy I can tolerate it :)

Place the waffles into a bowl when they first come off the iron and are a little soft. They'll conform to the shape of the bowl and make a little chili cup as they cool.

I wonder if they'd stick if I mixed a little cheese and jalapeno into the batter?

This reminds me: I haven't made cornbread in ages. I should do that.

If your waffle iron is non-stick they'll probably still come off with cheese in them. The same way cheese comes off the Foreman grill. Spritz the iron with Pam or some olive oil before hand if you're worried.
