Busy week

Haven't had time for much posting this week. V. busy. Work potluck tomorrow. Made banana pudding as my contribution to the aforementioned potluck. Still hate our midget kitchen. Going to bed now. Recipe below. That is all.

Banana Pudding
Serving Size : 12

2 cans condensed milk, sweetened (Eagle)
2 packages vanilla pudding mix -- 4 svg pkg instant
72 whole vanilla wafer cookies
4 tablespoons lemon juice
3 cups cold water
4 cups whipping cream -- whipped
8 whole bananas -- medium
1/2 teaspoon vanilla extract -- Madagascar bourbon vanilla
1 drizzle honey -- optional

Slice bananas and dip them in RealLemon lemon juice. In large bowl, combine Eagle sweetened condensed milk and water. Add pudding mix, beat well. In separate bowl, beat whipped cream into soft peaks; lace with honey and vanilla extract.

Chill five minutes. Fold in whipped cream. Spoon 1 cup pudding mixture into 2 & 1/2 quart glass serving bowl. Top with 1/3 each of the wafers, bananas, and pudding. Repeat layering twice, ending with pudding.

Cover and chill, preferably overnight. Garnish with extra banana slices and wafers, if desired.

NOTES: I first discovered the wonders of homemade banana pudding when someone brought it to my grandfather's funeral. (It's a Southern tradition to bring food to funerals.) Should you want to keep that tradition, this is a good one to do it with.

I've always thought it might be interesting sometime to poach the bananas in a little rum and brown sugar before layering them, but never could decide if that might be gilding the lily a bit much.

My mom makes banana pudding, but she makes it with a meringue on top and bakes it. I'll have to see if I can find her recipe...

That sounds delicious! *winks* If DC starts doing marriages and y'all go do it, give me a call and we'll fly up to be there. Oh, and if you just happened to fix your mom's banana pudding while we were there, well, hey, that'd be all right . . . *grins*
